Here is a Caracas cake, made for a friend's birthday. It's fun to do these simpler cakes once in a while, so I can experiment with different decorating techniques other than fondant.

Caramel mousse layered with a dark chocolate ganache and pieces of pear, decorated with
a pear miroir, Crispearls, marzipan and chocolate
